The Rotschiefer is aged entirely in stainless steel to showcase it’s freshness, and undergoes spontaneous fermentation.

Tropical and orchard fruit great the palate, with a burst of perceived sweetness that is quickly moderated by mouthwatering acidity. Tongue-tickling minerality, fades to lemon zest on the finish.

This wine lingers, and is paired best with spicy foods, most Asian foods, well-seasoned soups, stir fry, oysters and moldy cheeses.
